Aiya Organic Ceremonial Grade Matcha Details
USDA certified organic ceremonial grade matcha from Nishio, Japan. Smooth, mild, and blended for daily drinking. 30g.
The process is what separates matcha from ordinary green tea. The plants are shade grown for weeks before harvest, which forces the leaf to produce more chlorophyll and more L-theanine — that is where the deep colour and the savoury umami note come from. The leaves are then hand picked and stone ground into powder. Because you drink the whole leaf rather than an infusion, you get everything in it.
Ceremonial grade is Aiya's drinking matcha — blended to be whisked with water and taken on its own, where the sweetness and umami come through rather than fighting milk and sugar. This is the organic version; the conventional Ceremonial Grade is the same grade without certification.
One ingredient: organic matcha green tea powder. Nothing added.
30g is roughly 15 servings at 2g a bowl, so a tin lasts a fortnight at one a day — a sensible size for something that is best used fresh, since ground matcha loses colour and aroma over months once opened.
Aiya has been family-owned since 1888 and is run today by the fifth generation of the Sugita family. They are based in Nishio, in Japan's Aichi prefecture, where matcha has been grown for over 800 years.
Who Aiya Organic Ceremonial Grade Matcha Is For
This is for daily matcha drinkers who want organic certification and are drinking it straight rather than cooking with it. If you are making lattes or baking, the Culinary Grade is blended for that and costs less per gram.
Certified organic and kosher. As with any matcha, the finer the grind the better it suspends — Aiya stone grinds, which is the traditional and slowest method.
