Aiya Ceremonial Grade Matcha Details
Aiya's leading product. Ceremonial grade matcha from Nishio, Japan, blended for daily drinking. 30g.
The process is what separates matcha from ordinary green tea. The plants are shade grown for weeks before harvest, which forces the leaf to produce more chlorophyll and more L-theanine — that is where the deep colour and the savoury umami note come from. The leaves are then hand picked and stone ground into powder. Because you drink the whole leaf rather than an infusion, you get everything in it.
This is the one to start with if you are drinking matcha rather than cooking with it. Ceremonial grade is blended so the natural sweetness and umami carry on their own in water — no milk needed, no sugar to cover anything up.
One ingredient: pure matcha green tea powder.
It is also the better value of Aiya's two ceremonial options. The organic version is the same grade with USDA certification and costs more; if certification is not what you are buying, this is the same tea.
Aiya has been family-owned since 1888 and is run today by the fifth generation of the Sugita family. They are based in Nishio, in Japan's Aichi prefecture, where matcha has been grown for over 800 years.
