Organic certification on honey is harder than on a crop, because bees forage over kilometres and a beekeeper cannot fence that. It requires hives in a certified area large enough to contain the foraging range. That constraint is most of why this carries a premium — roughly 40% more per gram.

It also carries the MPI monofloral test. New Zealand's Ministry for Primary Industries sets the chemical and DNA markers separating monofloral from multifloral manuka, so meeting it is verified rather than a marketing word.

KFactor is Wedderspoon's own rating, and it is not the same as the MGO or UMF numbers other brands print. It measures pollen count and authenticity — whether the honey is genuinely manuka from the region claimed — rather than methylglyoxal concentration.
