Cacao nibs are the cacao bean crushed into pieces and nothing else — no sugar, no milk, no cocoa butter removed or added. They are chocolate in its most whole form, and they taste like it: intensely bitter, deeply chocolatey, with a hard crunch that softens slightly in the mouth.

Cacao and cocoa are the same bean treated differently. Cocoa is roasted at high heat, which develops the familiar chocolate flavour but degrades much of the flavanol content.
