Yacon has a high FOS (FructoOligoSaccharides) content that we don't digest ourselves, so not only does this sweet fibre have a very low glycemic index value which won't cause blood sugar to spike, but it also functions as a prebiotic to nourish the healthy bacteria to help our gastrointestinal tract and digestive systems function better.
