Popcorn's ability to pop is from the water in its starchy endosperm and it's hard outer shell or 'pericarp'. Heating it creates pressure inside until the out shell cracks and the inside explodes out releasing the water as steam. Eden Organic Popcorn's reclosable standing pouch retains the moisture needed for popping. After resealing please refrigerate it to best ensure popping.

Not all popcorn is a healthy snack. Conventional non-organic popcorn is on FDA's Total Diet Study that lists the top ten foods most contaminated with pesticides and chemicals. Non-organic popcorn is listed as containing toxic chlordane, dieldrin and toxaphene that have been shown to cause cancer, immune system suppression, reproductive disorders, liver damage, blood disorders, skin disorders, developmental disorders, birth defects (abnormal bone formation and others), kidney damage, endocrine disruption, central nervous system disorders, reduced IQ, short term memory, hyperactivity, and unusual spatial effects. These chemicals and others, referred to as POPs (persistent organic pollutants), have serious implications even when exposure is at extraordinarily low levels because many of these chemicals mimic human and animal hormones and cross the placenta during pregnancy. History
Most Native Americans enjoyed popcorn even before the birth of Christ. In the Bat Cave of west central New Mexico 5,600 year old popcorn ears were found. Researchers reported these findings at the 238th National Meeting of the American Chemical Society (ACS). Dr. Joe Vinson of the University of Pennsylvania said, "Early researchers thought fiber was the active ingredient for the benefits of whole grain" .... "But recently polyphenols emerged as potentially more important." Dr. Vinson further reported, "We really were surprised by the levels of polyphenols we found in popcorn. I guess it is because it's not processed."
