Saffron is a fragrant spice derived from the dried elongated stigmas and styles of Crocus sativus flower. The major bioactive compounds in saffron stigmas: crocins, crocetin, picrocrocin, and safranal are indicated for the beneficial health properties of saffron. In addition, saffron also contains various other active components, including carotenoids, zeaxanthin, lycopene, beta-carotene, and polysaccharides.
