KFactor is Wedderspoon's own rating, and it is not the same as the MGO or UMF numbers other brands print. It measures pollen count and authenticity — whether the honey is genuinely manuka from the region claimed — rather than methylglyoxal concentration. A higher KFactor means more manuka pollen, not more MGO. Do not compare KFactor against UMF as though they were one scale.

The honey is raw and unpasteurised. Commercial honey is heated and filtered to stay clear on a shelf; skipping that keeps enzymes, pollen and texture intact but means it will crystallise. Crystallisation is a sign it has not been over-processed, not a fault.

Manuka comes from bees foraging the manuka bush, Leptospermum scoparium, which flowers for only a few weeks a year in a limited part of New Zealand. That narrow window is why manuka costs what it does — supply is bounded by geography and season.

The taste is not what people expect from honey. It is darker, thicker and more caramel-and-mineral than floral, with a slightly bitter finish. Worth knowing before buying the 1kg.
