Aiya Organic Culinary Grade Matcha Details

USDA certified organic culinary grade matcha in a 100g bag — the working size, blended for lattes, smoothies and baking.

Ceremonial and culinary are not quality tiers so much as different jobs. Ceremonial grade is blended to be drunk on its own with water — smoother, sweeter, more delicate. Culinary grade is blended to hold its flavour against milk, sugar, heat and other ingredients, which is exactly what you want in a latte or a batch of cookies and is wasted in a plain bowl of tea.

This is the organic culinary option. One ingredient: organic matcha green tea powder.

The process is what separates matcha from ordinary green tea. The plants are shade grown for weeks before harvest, which forces the leaf to produce more chlorophyll and more L-theanine — that is where the deep colour and the savoury umami note come from. The leaves are then hand picked and stone ground into powder. Because you drink the whole leaf rather than an infusion, you get everything in it.

100g goes a very long way. Around 2g flavours a drink and 1–2 tablespoons flavours a whole batch of baked goods, so a bag covers a lot of ground — and at this size the cost per drink drops well below the 30g ceremonial tins.

Aiya has been family-owned since 1888 and is run today by the fifth generation of the Sugita family. They are based in Nishio, in Japan's Aichi prefecture, where matcha has been grown for over 800 years.

Who Aiya Organic Culinary Grade Matcha Is For

This is for anyone making matcha lattes at home, baking with matcha, or blending it into smoothies, who wants organic certification. It is also the sensible choice for a cafe or a home cook going through it steadily.

Certified organic and kosher. If you drink matcha straight with water, the Ceremonial Grade is blended for that instead.

Frequently Asked Questions

Product Information

➕ What is Aiya Organic Culinary Grade Matcha?
USDA certified organic culinary grade matcha in a 100g bag, blended for lattes, smoothies and baking.
➕ Why culinary rather than ceremonial?
Culinary grade is blended to hold its flavour against milk, sugar and heat. Ceremonial is blended to be drunk on its own in water, and its delicacy is wasted in a latte.
➕ How much do I use?
Around 2g to flavour a drink, or 1-2 tablespoons for a batch of baked goods.
➕ How does it compare to the non-organic culinary?
Same grade and use. This one carries USDA organic certification.

Benefits of Ingredients

➕ Why does shade growing matter?
It builds chlorophyll and L-theanine in the leaf, which produces matcha's colour and umami character.
➕ Will it survive baking?
That is what culinary grade is blended for - holding its flavour against heat and other ingredients.
➕ What is in it?
Organic matcha green tea powder, and nothing else.

Usage and Storage

➕ How do I make a latte?
Whisk about 2g into a small amount of hot water below boiling until smooth, then add hot or cold milk.
➕ Can I use it in smoothies?
Yes. It blends straight in, and the culinary blend is built to carry through other flavours.
➕ How should I store it?
Sealed, cool and away from light. Matcha fades over months once opened.

Use approximately 2g (1/2 tsp) to flavour drinks, or 1-2 tablespoons to flavour a batch of baked goods.

Additional Ingredients

Organic Matcha Green Tea Powder.

Warnings

Contains naturally occurring caffeine. Manufactured in a facility that may also process dairy, soy, tree nuts and wheat. Store sealed in a cool place away from light.
