Stevia rebaudiana is a small shrub native to South America which is known for its sweet tasting leaves. The leaf extract contains steviosides which are very sweet tasting and non-caloric, but also have beneficial effects on health. It has also been shown in humans that steviosides reduce postprandial blood glucose in type 2 diabetics, indicating improved glucose metabolism.

There are multiple hypoglycemic effects of stevioside, one of which is a dose-dependent reduction in phosphoenol pyruvate carboxykinase (PEPCK). Reducing the level of PEPCK decreases hepatic glucose production and improves glucose metabolism. Stevioside also acts directly on pancreatic beta cells to increase blood sugar stabilizer secretion.

    "This is the worst liquid Stevia product I have tried to date.it is not a liquid. Even after shaking the bottle vigorously, this is as thick as molasses and hardly pours through the drop dispenser. A runny, slimy, mess of a product, just terrible. Nothing like the liquid stevia purchased in other health food stores. You get what you pay for I think, this is very cheap compared to other liquid stevia offerings, I think that is part of the problem. Will NOT be buying this again."

What is Stevia?

Stevia rebaudiana, is a small shrubby member of the Chrysanthemum family, native to portions of Paraguay and Brazil. For several hundred years, Stevia leaves have been safely used in South America, China and Japan and are gaining acceptance in many other parts of the world. In it’s natural form, Stevia leaves are approximately 10 to 15 times sweeter than white sugar. Modern research has shown that Stevia’s sweetness is a result of a complex of stevioglycoside molecules, composed of glucose, sophorose and steviol and including stevioside, rebaudioside A and C and dulcoside A. Powdered Stevia extracts are typically 200 to 300 times sweeter than white sugar.

What is Stevia used for?

  • Stevia has been used predominantly as a sweetener flavour, because of its intensely sweet taste.
  • Stevia also enhances the true flavours of foods that it is combined with.
  • Stevia has been used traditionally for dental hygiene, because it is believed to inhibit plaque, cavities and bleeding gums.
  • Stevia was also used as a traditional gargle for sore throats.

What is the substitution factor for Stevia in place of common white sugar?

White powdered Stevia extract Recommended for cooking and baking applications.
Replace one cup of sugar with approximately 1/4 to 1/2 teaspoon of exract.

Liquid Stevia Extract Recommended for sweetening hot and cold beverages.
Replace one teaspoon of sugar with approximately 2-3 drops of extract.

Can Stevia be Used by Diabetics?

How is Stevia Processed?

The Chinese scientist, Tei-fu-chen perfected the extraction of stevia in the 1950s. He applied a non-chemical extraction method that had been recorded in the herbal manuscripts of the chinese emperors. This method which is still the principle technique used to this day, removes the green colour and the bitter aftertaste of the stevia leaves.

Can Stevia Replace Other Dietary Sweeteners?

Stevia can be used in place of all sweeteners from sugar to honey to aspartame. Stevia is a natural product delivering great taste without the empty calories of other sweeteners. Refined Stevia extracts are considered to be non-caloric. They are also suitable for cooking and baking, because they are extremely heat stable. Stevia does not caramelize, or crystallize like sugar, so it may not be suited for a few applications. In Japan, substitution of Stevia for other sweeteners has proven to be both practical and economic.



Stevia Recipes

Apple Pie Ingredients :

6 cups sliced apples
1/2 tsp stevia powder
1/2 cup arrowroot flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tbsp butter

Directions: Roll out pastry for double crust pie. Combine stevia, arrowroot flour and spices. Add to apples and mix well. Place in bottom pastry shell. Dab with butter. Place covering pastry on top and vent. Bake at 400 for 10 minutes then reduce to 350. Bake until centre filling is bubbling.

Berry Vinaigrette Ingredients:

1/8 tsp stevia powdered extract
1 teaspoon ground mustard
1/3 cup wine vinegar
1 cup olive oil
1/3 cup pure, unsweetened, blueberry juice

Directions: In a small mixing bowl, combine stevia and mustard. Add vinegar; mix well. Gradually add oil while beating on medium speed. Add juice. Beat for about 5 minutes. Cover and refrigerate. Serve over baby greens. Refrigerate leftovers. Yield: 1 2/3 cups.
