Mesquite is a flour or ‘meal’ made by stone-grinding the entire pod, including the seeds, of the mesquite plant. This plant is also known as Algorroba (Prosopis juliflora) a leguminous plant found growing in arid areas around the world, including parts of South America and the southwestern U.S.

Giddy Yoyo Mesquite originates from the mineral rich soil of arid regions of Peru. Though mesquite trees grow in many locations, Peruvian mesquite trees are sustainable and the pods are collected from wild trees. These trees grow quickly and infuse the soil with nitrogen in places that other trees are unable to grow. The natural harvesting of these pods has no negative impact on the environment. Mesquite trees thrive without supplemental water, and provide a foundation for a diverse yet threatened ecosystem. In today’s culture, mesquite trees are valued primarily for their attractive wood and exploited for charcoal production, fuel and cooking.

Traditionally, mesquite seed pods have been used in desert areas as a food source by the indigenous peoples, who traditionally ground them into a powder to be used as flour or processed them into a sweetener, a sweet beverage, or a fermented alcoholic drink. For thousands of years, Native Americans in the Southwest and Mexico relied on mesquite as a food staple. Today, mesquite powder is a versatile food with a high nutritional and flavour value.

Giddy Yoyo Mesquite powder is ground from the entire pod, including the seed, and may be high in: Protein (15-25%), Lysine (beautifully balancing the high Arginine content of GY Cacao), Calcium, Magnesium, Potassium, Iron, Zinc, and may contain a high percentage (25%) of soluble dietary fiber. Mesquite is naturally low in sugar with a glycemic index of 25. Mesquite digests more slowly than many grains preventing sharp rises and falls in blood sugar. Mesquite flour is naturally gluten free, and as a leguminous flour it is higher in protein than most conventional grain flours.

Mesquite can be a valuable low-glycemic addition to a Diabetic diet, or for anyone wishing to maintain a healthy blood sugar level. It’s delicious in all kinds of yogurts and energy bars, fruit/nut butter spreads. As a seasoning, it can be added to soups, sauces, casseroles, and virtually any vegetable or meat dish,or even sprinkled on desserts.

Mesquite can also be used in breads, biscuits, pie crusts, and other raw or baked goods, where it is usually used in combination with other flours (25-30% mesquite). The rich taste and aroma pairs well with both vanilla and chocolate, and lend a delightful maltiness when used in sweet treats.

Suggested Use

Blend 1-4 tbs of Giddy Yoyo Mesquite into smoothies, yogurt, oatmeal, granola, chili, chocolate, tea and coffee, etc. When baking, try replacing a portion of flour with GY Mesquite. Tastes particularly amazing mixed with Giddy Yoyo Cacao and Maca.
